2cupsquick rolled oats plus about 1 tbsp for sprinkling on top
2cupsbrown sugar, packed
2sticks of butter(I used regular, not unsalted)
1/2cupchopped pecans
Dash of cinnamon sugar
Instructions
To make the pie filling you'll need 6 apples, peeled, cored, and cubed. I used 3 honey crisp and 3 granny smith.
Add the apple cubes to a medium sauce pan along with sugar, water, flour, cornstarch, cinnamon and nutmeg. Stir everything together, and then bring to a boil over medium high heat. Once boiling, turn down the heat to about medium and simmer.
After about 10 minutes, the apples should soften. I happen to like apple cinnamon flavor, so I sprinkled a little extra cinnamon sugar on at the end! You can add more or less depending on your taste.
Once the apples are soft, remove from heat and set aside while you prepare the crust. This is the super easy part! You'll need flour, quick oats, brown sugar and butter. Melt the butter in a microwave safe bowl, about 30 seconds to a minute. In a separate bowl, combine 2 cups each of flour, oats, and brown sugar and mix together, and then stir in the melted butter until you get a crumbly dough like consistency.
Take half of the mixture, and press into a large glass dish (I used a 9x13 Pyrex) for the crust. Then pour the pie filling on top, and crumble the remaining mix onto the top of the filling. Next, I sprinkle on a few more oats, the chopped pecans, and top with a little bit more cinnamon sugar.
Bake for 30-40 minutes at 350 or until the top is golden colored and the pie filling is bubbling. Let it cool for a few minutes and enjoy! It's good warm or room temp.
