Hi friends! Today I'm sharing a new favorite recipe for homemade gingerbread cookies. I LOVE gingerbread, and the spicier, the better. This recipe is wonderful. The cookies are perfectly spiced, a little bit chewy, and crispy around the edges. They make the perfect canvas for decorating!

Lately...Christmas Decorating Edition

Christmas is my favorite season, and yes, I think of it as a season, not just a single holiday. I love the decorations, the lights, the movies, the sense of community, the food. 

I would be lying if I said I loved the shopping though. I don't do much shopping this time of the year. We like to focus more on family time and experiences than gifts. (Before you start thinking we're Grinchy, we do buy gifts for Harper!!! I LOVE buying stuff for her, but I don't love buying gifts for everyone under the sun. I'd rather make something, or bake something for people. And my mom usually helps with the gift wrapping-it's not my thing!)

Since December 1st rolled around, yucky winter illness has swept through our little family and all of us have been sick. We've kept our spirits up though and have been busy decorating and enjoying all the moments. 
Today I thought I'd share a little bit of the things that I love, that make our home feel cheery and festive!

 These snowmen were from the dollar store I worked at during high school. They've been on almost every desk that I've worked at since then, and now they're in my dining room. Harper loves playing with them, and she moves them around the house. They're a Mommy, Daddy, and Baby snowman according to her. :-)

Fun Friday!

Around the Farm, Soul Walk

Come for a walk on the farm with me today, friends. It's time for real talk. How do you calm your soul when you are anxious and the demands of life are too much? 

A few things work for me like writing, knitting, or going for a drive, but my favorite is a soul walk. What in the world is it? When anxiety gets the best of me and I really need to clear my head, a walk around the farm with camera in hand is just what I need. I call it a soul walk.

I've never lived in a suburban area, so I'm not sure what the equivalent is, maybe a walk in the park, a drive out to the countryside? 

I need to connect to nature; see the sunshine, feel the breeze, pick some flowers, observe life. Disconnecting from TV, phone, internet, and go out and just be. Somehow along the way, my anxiety subsides and my soul finds the peace I need.

You know there are those days where you just aren't feeling it?? Don't want to cook or clean or do anything. Just lay in bed and have your mama bring you some soup and let you watch tv. Yeah...that doesn't really happen in real life, or not in mine anyway.  If this happens to you, you're lucky and I totally am hating you a little bit right now (kidding of course)!

In my world, being a stay at home mom means no days off, even if I'm feeling yucky. On days like this, I'm craving comfort food, and something super easy to make so that I can get back in bed.

This dish is it. One pan, simple ingredients. And even better, it can be paleo if you want it to be. I found this while browsing on pinterest a few months ago, and it was an easy winner for our family.

Breakfast Casserole (It's Paleo!!!)

So, this is what I call Egg Pie. Crustless Quiche. Breakfast Casserole. This can be whatever you want it to be. But most importanly, it's delicious.

For the past year, I've been trying to cook healthier options for my family. I try a lot of paleo recipes. I've noticed that I feel better when I'm eating 100% paleo, but I have way too much of a sweet tooth to stay that way.  I try to find a good balance of healthy eating and food splurges. Eating healthier is sooo much easier when the food is yummy though, ya know?!

Chocolate Covered Pretzel Sticks

Because everyone needs chocolate, sprinkles, and pretzels? Am I right!? 
 I made these for my daughter's 3rd birthday party and they were so good and super easy. 

I bought the dipping chocolate from Walmart, and the pretzels and sprinkles are from Aldi. Just follow the instructions for heating the chocolate, then dip the pretzels, add the sprinkles, and let cool on wax paper. Done!

Cream Cheese Squares

For my first post, I'm just going to jump in and share a favorite recipe! Friends, this is one of my very favorite desserts, and it couldn't be easier to make! Also, this post is going to have lots of exclamation points. These are that good, and yes, I'm that excited about it! ;-) 

This recipe is from a church cookbook that I bought several years ago. The first time I tried it, I was hooked. My brother took a look and said, "those are ooey-gooey bars!" and another friend calls them chess squares. Whatever you call them, they are decadent and so worth trying.
